Pumpkin Bread

Directions
Ingredients
- Pre-heat oven to 350°. Treat loaf pans for cooking spray and set aside.
- In a large bowl, sift together dry ingredients except sugar. Add dates and nuts and set aside
- In mixing bowl, mix together sugar and oil. Add eggs 1 at a time mixing in between
- Add pumpkin and mix well
- Combine dry ingredients and then add water and mix well
- Place in either large loaf pans or mini pans (8 to a 13x9 pan) and bake in oven. 25 minutes for the mini loafs and 1 hour for the large loafs
- Test with toothpick for doneness. Remove and cool on wire rack for 5 to 10 minutes and then remove from pans and continue to cool on racks
- 3½ cups flour
- ½ tsp baking powder
- 2 tsp baking soda
- 1½ tsp salt
- 1 tsp cinnamon
- ½ tsp cloves
- ⅔ cup chopped nuts
- ⅔ cup chopped dates
- 2⅔ cup sugar
- ⅔ cup vegetable oil
- 4 eggs
- 2 cups pumpkin
- ⅔ cups water
