- 3 cups Buckwheat flour
- 3/4 cup cornmeal
- 1-1/4 t salt
- 1 T sugar
- 1 package yeast
- 1 cup warm water
- 1 egg
- 2 T molasses
- 2 to 3 T vegetable oil
- 1 t baking soda
- 1 cup warm water
- Combine first 4 ingredients in a large mixing bowl
- Dissolve yeast in 1 cup warm water
- Stir yeast mixture into dry ingredients
- Add warm water as required for proper consistency
- Cover with dish towel and let stand overnight
- Next morning, add egg, molasses, and oil
- Dissolve baking soda into 1 cup warm water and add to above for proper consistency
- Cook on hot greased griddle (375)
- Warm water for yeast and baking soda should be between 103 and 108 F for best results
- ensure yeast is thought dissolved and activated
