Beef Enchiladas

Directions
Ingredients
  1. Blend oil, flour, chili powder and 2 teaspoons salt in 2 quart saucepan.
  2. Bring to boil over low heat, stirring constantly. Remove from heat and set aside
  3. Brown ground beef with onions in skillet. Drain.
  4. Stir in tomato sauce, olives and salt.
  5. Spoon mixture into tortillas. Roll tortillias to enclose filling
  6. Place in greased baking pan and pour chili gravy over top. Sprinkle with cheese and bake at 325 for 30 minutes

Notes:

You can adapt the filling to suit your taste. I use Taco mix rather than tomato sauce and olives. You can also add diced tomatoes. You can also use large buritto style tortillas and make fewer enchilladas
