Crab Cakes

From: All Star program Prep Time: 30 minutes plus 30 mins chill
Serves: 4 Cook Time: 10 minutes total

Ingredients
- Pick crabs
- Mix all ingredients, using only 1/4 cup of crackermeal less egg,together
- beat one egg and stir into crab mixture
- form into patties, add additional egg if too dry
- dust patties with remaining crackermeal and refridgerate for 1/2 hour
- in a cast iron skillet, brown patties over medium heat in sweet butter and olive oil on both sides
- place skillet with patties in preheated oven (400) and bake for approximately 6 minutes
- 1 lb crabmeat (fresh picked is best)
- 1 or 2 eggs
- 1 scallion
- 2 1/2 t dill
- 1 T parsley
- 1/2 t chili powder
- 1/2 t dijon mustard
- juice of 1/2 lemon
- 1/3 cup crackermeal
- salt and white pepper to taste
