Crab Cakes



  From: All Star program           Prep Time: 30 minutes plus 30 mins chill
  Serves: 4            Cook Time: 10 minutes total

Directions
Ingredients
  1. Pick crabs
  2. Mix all ingredients, using only 1/4 cup of crackermeal less egg,together
  3. beat one egg and stir into crab mixture
  4. form into patties, add additional egg if too dry
  5. dust patties with remaining crackermeal and refridgerate for 1/2 hour
  6. in a cast iron skillet, brown patties over medium heat in sweet butter and olive oil on both sides
  7. place skillet with patties in preheated oven (400) and bake for approximately 6 minutes
