Bang Bang Shrimp

Directions
Ingredients
  1. In a small bowl beat eggs and milk
  2. In another small bowl add cornstarch and any additional spices you wish to play with
  3. Soak shrimp in egg wash, then dredge in cornstarch
  4. Place shrimp in rack covered with paper towel while continuing process with remaining shrimp
  5. Heat about 2 to 3 inches of oil in a heavy bottomed pan (cast iron is best) to 375 degrees
  6. Fry shrimp in single layer about 1 to 2 minutes per side
  7. Remove shrimp to rack with clean paper towel and repeat with remaining shrimp
  8. Once Shrimp are fried, combine with Bang Bang sauce and serve immediately

Notes:

Since cornstarch is used, shrimp will not be golden brown as with flour, but rather a light brown color when fried.
