- 1 pkg Simply Potatoes Southwest Style Hash Browns or equivalent
- 12 oz breakfast sausage
- 1/2 c chopped green peppers (optional)
- 2 cups (8oz) shredded Jack or Cheddar Cheese
- 4 eggs
- 1 cup milk
- 1 medium tomato (seeded and chopped) optional
- Preheat oven to 350. Spray 8” square baking dish with non-stick spray
- In large skillet, cook sausage and green peppers (optional) over medium hig heat until sausage is browned and peppers are tender (approx. 8 to 10 minutes)
- Place half of potatoes in baking dish. Top with half of sausage mixture and 3/4 c of cheese, repeat.
- Combine eggs and milk in medium bowl and whisk well. Pour egg mixture over layered mixture in baking pan. Cover with foil and bake for 45 minutes
- Remove foil and add chopped tomatoes and remaining cheese. Bake uncovered for an additional 10 to 15 minutes or until knife inserted in center comes out clean.
- Let stand 10 minutes before serving.
- Tomato and green peppers optional. Substitute chorizo or Italian sausage for breakfast sausage if desired
- Double recipe using 8x13 rectangular baking dish. Cook times approximately the same
