- 1 pound Jumbo Shrimp, peeled and deveined
- 2 eggs
- 1/4 cup milk or buttermilk
- 3/4 cup cornstarch
- canola oil or peanut oil for frying
- In a small bowl beat eggs and milk
- In another small bowl add cornstarch and any additional spices you wish to play with
- Soak shrimp in egg wash, then dredge in cornstarch
- Place shrimp in rack covered with paper towel while continuing process with remaining shrimp
- Heat about 2 to 3 inches of oil in a heavy bottomed pan (cast iron is best) to 375 degrees
- Fry shrimp in single layer about 1 to 2 minutes per side
- Remove shrimp to rack with clean paper towel and repeat with remaining shrimp
- Once Shrimp are fried, combine with Bang Bang sauce and serve immediately
- Since cornstarch is used, shrimp will no be golden brown as with flour, but rather a light brown color when fried.
